The Sous Chef supports the Executive Chef in managing daily kitchen operations, food preparation, menu execution, quality control, hygiene, and kitchen staff supervision. Candidates typically need formal culinary training, several years of professional kitchen experience, and strong knowledge of Indonesian and international cuisine, food safety, portion control, and cost management. Experience in a hotel or busy restaurant environment is preferred. The successful candidate should be organized, creative, physically resilient, and able to work under pressure, including weekends and public holidays. Expectations include maintaining Accor standards, coaching team members, minimizing waste, ensuring consistent presentation, and delivering excellent food quality and guest satisfaction.
Mercure is Accor’s internationally recognized midscale hospitality brand, combining reliable hotel standards with local character and cultural experiences. Mercure Jakarta Gatot Subroto is located in Jakarta’s Mampang Prapatan area, a major business and commercial district with convenient access to offices, restaurants, shopping, and transport links. The hotel serves business travelers, leisure guests, meetings, and events, requiring coordinated service across rooms, food and beverage, and culinary operations. As part of Accor, the property provides employees with exposure to global hospitality practices, structured training, career development opportunities, and an international working environment. The hotel’s culinary team is expected to deliver consistent, safe, and appealing food while reflecting both local Indonesian flavors and international guest preferences.
Indonesia offers hospitality opportunities across Java, Bali, Lombok, Sumatra, and the eastern islands. Jakarta, on Java, has the widest range of hotel, restaurant, catering, and corporate roles, while Bali and Lombok provide strong resort and tourism employment. Indonesian culture values politeness, community, respect for elders, and religious diversity; modest dress and sensitivity around local customs are important. Jakarta is fast-paced, urban, and affordable compared with many global capitals, though traffic and humidity can be challenging. Bali offers a more relaxed lifestyle but higher rents in popular areas. Foreign nationals generally need an employer-sponsored work visa and work permit, with requirements depending on nationality and position; working on a tourist visa is not permitted. Before relocating, confirm sponsorship, accommodation, insurance, tax arrangements, contract terms, and access to healthcare. Learning basic Indonesian is highly useful for daily life and workplace integration.
