Job Description

The Junior Sous Chef – Japanese Cuisine supports the kitchen leadership team in preparing high-quality Japanese dishes, maintaining consistent presentation and taste, and supervising daily section operations. Candidates should have professional experience in Japanese cuisine, strong knowledge of sushi, sashimi, hot dishes, ingredients, food safety and hygiene standards. A culinary qualification and experience in a luxury hotel or resort are advantageous. The role requires good organizational skills, attention to detail, teamwork and the ability to work under pressure in a multicultural environment. The successful candidate is expected to assist with menu development, control food quality and wastage, train junior colleagues, maintain cleanliness and follow resort standards. Flexibility to work shifts, weekends and public holidays is essential.
