Job Description

The Captain, Shang Palace is responsible for leading daily restaurant service, coordinating waitstaff, taking or overseeing orders, maintaining service standards, and ensuring guests receive attentive, polished dining experiences. Candidates should have previous experience in a quality hotel or fine-dining restaurant, strong knowledge of food and beverage service, and confident communication skills. Familiarity with Chinese cuisine, especially Cantonese dining, is helpful. The role requires good leadership, organisation, customer-service judgment, and the ability to remain professional during busy periods. Flexibility to work rotating shifts, weekends, and public holidays is expected.
