Job Description

The Chef de Cuisine for Sirena, a seafood restaurant at Shangri-La, is responsible for leading daily kitchen operations, menu development, food quality, presentation, cost control, and team performance. Candidates should have substantial experience in high-end hotels or fine-dining restaurants, particularly with seafood cuisine, kitchen leadership, hygiene standards, and modern culinary techniques. Strong knowledge of HACCP and food-safety procedures, ordering and inventory control, staff scheduling, and coaching is expected. The successful candidate should be creative, organized, commercially aware, and able to maintain consistent standards during busy service periods while delivering an excellent guest experience.
