Job Description

The Sous Chef, Garde Manger supports the kitchen leadership team and oversees cold-food preparation, including salads, canapés, sandwiches, terrines, dressings and plated desserts where required. Candidates should have professional culinary training and several years of experience in a hotel or high-volume restaurant, preferably in garde manger or a similar section. Strong knowledge of food safety, hygiene, portion control and kitchen organization is expected. The successful candidate should be able to lead and train team members, maintain consistent quality, control food costs, coordinate with other kitchen sections and work effectively under pressure. Flexibility for shifts, weekends and public holidays, along with good communication and a hands-on attitude, is essential.
