Job Description

The Chef de Cuisine will lead the kitchen operation for a South Italian restaurant, ensuring authentic cuisine, consistent quality, attractive presentation and excellent food safety standards. Requirements typically include formal culinary training, substantial experience in Italian or Mediterranean cuisine, and previous experience supervising a professional kitchen, preferably in a luxury hotel or fine-dining environment. The successful candidate should be confident in menu planning, recipe development, food costing, purchasing, inventory control and team leadership. Shangri-La will expect strong organizational skills, creativity, attention to detail and the ability to maintain high standards during busy service periods. Good communication, staff coaching and knowledge of Singapore food-safety regulations are also important.
