Job Description

The Chef de Cuisine will lead the kitchen operation of Sirena, Shangri-La’s seafood restaurant, ensuring consistently high-quality food, presentation, hygiene, cost control, and guest satisfaction. Requirements typically include several years of culinary experience in a luxury hotel, resort, or high-end restaurant, strong seafood knowledge, proven supervisory experience, and sound understanding of HACCP and food-safety standards. The successful candidate is expected to manage kitchen staff, plan menus, control inventory and labor costs, coordinate with service and purchasing teams, train colleagues, and maintain Shangri-La’s quality standards. Flexibility, creativity, leadership, and the ability to work under pressure, including weekends and holidays, are essential.
