Job Description

The Chef de Partie – Indian Cuisine is responsible for running an assigned kitchen section, preparing authentic Indian dishes, and maintaining consistent standards of taste, presentation, hygiene, and food safety. Candidates should have professional culinary training and several years of experience in Indian cuisine, preferably in a quality hotel, restaurant, or resort. Strong knowledge of spices, cooking methods, mise en place, portion control, and HACCP procedures is expected. The successful candidate should work efficiently under pressure, manage stock responsibly, follow recipes and Shangri-La standards, and cooperate well with the wider kitchen team. Flexibility to work shifts, weekends, and public holidays is essential. Cantonese or English communication skills and experience in an international hotel environment would be advantageous.
