Job Description

The Executive Chinese Chef leads the Chinese kitchen operation, developing authentic menus, maintaining consistent food quality, controlling costs, and ensuring excellent guest experiences. Candidates should have extensive experience in Chinese cuisine, preferably in a luxury hotel, resort, or high-volume restaurant, with strong knowledge of Cantonese or regional Chinese cooking. The role requires proven leadership, menu-planning, purchasing, food-costing, and staff-development skills. A strong understanding of hygiene, HACCP standards, allergen control, and kitchen safety is expected. The successful candidate should be creative, commercially aware, calm under pressure, and able to train a multicultural culinary team while meeting Shangri-La's service and quality standards.
