Job Description

The Banquet Sous Chef supports the kitchen leadership team in preparing and delivering high-quality Western banquet menus at The St. Regis Singapore. The role requires professional culinary training and several years of experience in hotel, banquet, or fine-dining kitchens, preferably with strong Western cuisine knowledge. Responsibilities include supervising chefs and kitchen colleagues, coordinating food production, maintaining presentation and portion standards, managing mise en place, monitoring stock, and ensuring compliance with food safety and hygiene regulations. The successful candidate is expected to remain calm during busy events, communicate clearly, lead by example, control waste and costs, and collaborate closely with banquet service and other hotel departments. Flexibility to work shifts, weekends, and public holidays is essential.
