Candidates should have professional culinary or butchery training and previous experience in a hotel, restaurant or high-volume kitchen. Good knowledge of food safety, hygiene, HACCP procedures, knife skills and meat handling is expected. The successful candidate should work efficiently under pressure, maintain consistent quality, control waste and follow portion specifications. Teamwork, reliability, physical stamina, attention to detail and flexibility for shifts, weekends and public holidays are important. Experience with international cuisine and luxury or branded hotel operations would be an advantage.
