Job Description

The Executive Chinese Chef leads the Chinese cuisine operation, overseeing menu planning, food preparation, quality control, kitchen hygiene, purchasing, costing and team performance. Candidates should have substantial experience in a luxury hotel, resort or high-end Chinese restaurant, with strong knowledge of Cantonese or regional Chinese cuisine. Proven leadership, creativity, cost awareness and the ability to train multicultural kitchen teams are expected. The role also requires excellent food-safety practices, reliable organization, calm decision-making during busy service and a commitment to Shangri-La’s guest-service standards. Experience with banquet operations and managing kitchen budgets would be advantageous.
