Job Description

The Chef de Cuisine will lead the kitchen operation of Sirena, Shangri-La's seafood restaurant in the Philippines. Requirements typically include culinary training, substantial experience in a luxury hotel or upscale restaurant, strong knowledge of seafood preparation, food safety, menu planning, costing, and kitchen controls. The candidate is expected to supervise and develop culinary staff, maintain consistently high standards of taste and presentation, manage ordering and inventory, control costs, and coordinate smoothly with restaurant service and hotel departments. Leadership, creativity, organization, stamina, and the ability to work flexible shifts, weekends, and holidays are essential. Experience with international cuisine and premium resort operations would be an advantage.
