The Sous Chef – Chinese Cuisine supports the Executive Chef in managing Chinese kitchen operations at Mercure Serpong Alam Sutera. Requirements typically include professional culinary training, several years of experience in Chinese cuisine, strong knowledge of ingredients, sauces, cooking techniques, food safety and hygiene standards. The candidate should be able to supervise kitchen colleagues, coordinate preparation and service, control food quality and portioning, manage stock, reduce waste and maintain consistent presentation. Good communication, teamwork, discipline and the ability to work under pressure are essential. Experience in a hotel or high-volume restaurant is preferred, together with leadership skills, flexibility for shifts, weekends and public holidays, and a genuine commitment to guest satisfaction.
