Job Description

The Chef de Cuisine will lead the South Italian kitchen at Shangri-La Singapore, overseeing menu planning, food preparation, presentation, quality, hygiene, cost control and daily operations. Candidates should have substantial experience in Italian cuisine, preferably in luxury hotels or high-end restaurants, with strong knowledge of South Italian ingredients, techniques and regional dishes. Culinary qualifications and proven supervisory experience are expected. The successful candidate should be creative, organised and commercially aware, while maintaining consistently high standards. Responsibilities include coaching and scheduling kitchen colleagues, managing stock and suppliers, controlling food costs, complying with Singapore food-safety regulations and working closely with restaurant and hotel teams. Flexibility, leadership, attention to detail and the ability to perform under pressure are essential.
