Job Description

The Sous Chef – Western supports the Executive Chef in managing Western cuisine operations, preparing high-quality dishes, supervising kitchen colleagues, and maintaining consistent food standards. Candidates are generally expected to have professional culinary training and several years of experience in a hotel, resort, or high-volume restaurant, preferably with strong Western cuisine knowledge. The role requires leadership, menu and recipe execution, ordering and stock control, cost awareness, and the ability to work effectively under pressure. Knowledge of HACCP, food hygiene, workplace safety, and kitchen procedures is important. Marriott expects a professional, hands-on leader who can coach the team, maintain cleanliness, deliver excellent guest experiences, and work flexibly across shifts, weekends, and public holidays.
