Job Description

The Chef de Cuisine leads the daily operation of an assigned kitchen or restaurant, overseeing menu execution, food quality, presentation, hygiene, costs, and team performance. Candidates typically need formal culinary training, substantial experience in a luxury hotel or upscale restaurant, strong knowledge of international cuisine, HACCP and food-safety standards, and proven leadership ability. The role expects excellent organization, creativity, cost control, communication, and the ability to remain calm during busy service periods. The successful candidate will train and motivate culinary staff, coordinate with other hotel departments, maintain Shangri-La standards, manage stock and wastage, and consistently deliver memorable dining experiences for guests.
