Job Description

The Executive Pastry Chef leads the pastry and bakery operation, creating high-quality desserts, breads, chocolates, cakes and other products for restaurants, banquets and room service. Candidates are typically expected to have formal culinary training, substantial pastry experience and previous leadership experience in a luxury hotel, resort or high-volume kitchen. Strong knowledge of baking techniques, food safety, hygiene, costing, menu development and kitchen supervision is essential. The successful candidate should be creative, organised and commercially aware, while maintaining consistent standards and controlling wastage. Responsibilities also include training pastry staff, managing ordering and inventory, coordinating with other culinary departments and ensuring that Shangri-La’s quality and presentation standards are consistently delivered.
