Executive Pastry Chef

Job Description

The Executive Pastry Chef leads the pastry and bakery operation, overseeing menus, production, presentation, quality, food safety, purchasing and cost control. Candidates should have extensive experience in luxury hotels, fine dining or high-volume pastry operations, with strong skills in French and international pastries, breads, desserts and chocolate work. Formal culinary training and proven leadership experience are normally expected. The successful candidate will develop creative products, maintain Shangri-La standards, coach and schedule the pastry team, manage stock and wastage, and work closely with executive chefs and food-and-beverage departments. Creativity, organisation, commercial awareness, attention to detail, resilience and the ability to work under pressure are essential.
