Job Description

The Baker Chef de Partie supports the pastry and bakery operation at Four Seasons Hotel Tokyo at Marunouchi. Responsibilities typically include preparing breads, pastries and baked goods to established recipes and presentation standards; organizing mise en place; monitoring proofing, baking and storage; maintaining cleanliness and food-safety procedures; controlling waste; and assisting with menu preparation and service. Candidates should have professional bakery or pastry experience, sound knowledge of ingredients and baking techniques, attention to detail, creativity, stamina and the ability to work accurately under pressure. Culinary training and experience in a luxury hotel or high-volume kitchen are advantageous. Good teamwork, flexibility, communication skills and a willingness to work shifts, weekends and holidays are expected.
