Job Description

The Pastry/Bakery Sous Chef supports the Pastry Chef in managing daily bakery and pastry production, ensuring consistent quality, presentation, food safety and timely service. Requirements typically include formal culinary training, several years of pastry or bakery experience, and previous supervisory experience in a hotel, resort or high-volume commercial kitchen. The candidate should have strong knowledge of breads, cakes, desserts, chocolate and plated pastries, along with good organisational and communication skills. Expectations include leading and coaching team members, monitoring stock and wastage, maintaining hygiene standards, following recipes and production schedules, and working flexibly across shifts, weekends and public holidays in a busy luxury hospitality environment.
