Job Description

The Sous Chef (Garde Manger) oversees cold kitchen operations, including salads, appetizers, sandwiches, canapés, dressings, and other chilled preparations. Candidates typically need formal culinary training, several years of professional kitchen experience, and strong knowledge of food safety, hygiene, portion control, and presentation. The role requires leadership, menu execution, ordering, stock control, and close coordination with other kitchen sections. The successful candidate is expected to maintain consistently high standards, train and guide team members, control costs, work efficiently under pressure, and support the Executive Chef in delivering Shangri-La’s quality and service standards. Experience in a luxury hotel, resort, or international restaurant is strongly preferred.
