Job Description

The Italian Sous Chef supports the Executive Chef in managing Italian food preparation, kitchen operations, staff supervision and service quality at Jakarta Marriott Hotel Gelora. Candidates should have professional culinary training and several years of experience in Italian cuisine, preferably in an upscale hotel or restaurant. Strong knowledge of sauces, pasta, meat, seafood, plating and food-safety standards is expected. The role requires leadership, organization, creativity and the ability to maintain consistent quality during busy services. Candidates should communicate effectively with kitchen and service teams, control food costs, minimize waste and follow Marriott’s hygiene and operational procedures. Flexibility to work shifts, weekends and holidays is essential.
