Service Manager - Chef de Cuisine (Italian Cuisine)

Job Description

The Chef de Cuisine will lead the Italian kitchen operation, ensuring consistently high food quality, authentic preparation, attractive presentation and excellent hygiene standards. Requirements typically include formal culinary training, substantial experience in Italian cuisine, and previous leadership experience in a luxury hotel or high-end restaurant. The successful candidate should be confident managing menus, food costs, purchasing, inventory, kitchen staffing and daily service. Strong communication, organization and coaching skills are expected, together with the ability to work under pressure and maintain Shangri-La’s service standards. Knowledge of Singapore food-safety regulations and HACCP practices would be advantageous.
