Job Description

The Hygiene & Compliance Manager is responsible for maintaining high standards of food safety, hygiene, sanitation and regulatory compliance across the hotel. Requirements typically include a diploma or degree in food science, hospitality, environmental health or a related field, together with experience in hotel, catering or food-service hygiene management. Knowledge of Singapore food-safety regulations, HACCP principles, audits, risk assessment and staff training is expected. The successful candidate should be organised, observant and confident when communicating with operational teams. Key expectations include conducting inspections, investigating incidents, maintaining compliance records, coordinating corrective actions, preparing reports and ensuring departments consistently meet Shangri-La and statutory standards.
