Job Description

The Sous Chef (Garde Manger) supports the Executive Sous Chef in managing cold-kitchen operations, including salads, sandwiches, terrines, canapés, desserts, buffet displays, and food presentation. Candidates should have professional culinary training and several years of experience in a hotel, resort, or high-volume restaurant, preferably with garde manger expertise. Strong knowledge of food safety, sanitation, portion control, ordering, and kitchen cost management is expected. The successful candidate should lead and train team members, maintain consistent quality, work efficiently under pressure, coordinate with other kitchen sections, and uphold Shangri-La’s service and hygiene standards. Flexibility for shifts, weekends, and holidays is essential.
