Job Description

The Chef de Cuisine for Ming Pavilion is responsible for leading the restaurant kitchen, maintaining Shangri-La’s culinary standards, and delivering authentic, high-quality Chinese cuisine. The role typically requires substantial experience in a luxury hotel or fine-dining environment, strong knowledge of Cantonese cuisine, menu planning, food costing, purchasing, hygiene controls, and team leadership. The successful candidate is expected to manage daily kitchen operations, train and motivate culinary colleagues, control quality and presentation, monitor budgets, and maintain compliance with food safety regulations. Creativity, organization, calm decision-making, and the ability to work under pressure are essential. Cantonese and English communication skills, together with relevant culinary qualifications, would be advantageous.
