Job Description

The Sous Chef (Garde Manger) supports the Chef de Cuisine in managing cold kitchen operations, including salads, appetizers, sandwiches, canapés, dressings and food presentation. Candidates are generally expected to have culinary training and several years of professional kitchen experience, preferably in an upscale hotel or resort. Strong knowledge of food safety, hygiene standards, kitchen procedures and HACCP principles is important. The role requires leadership, organization, creativity and the ability to train and supervise culinary colleagues. The successful candidate should work calmly under pressure, maintain consistent quality, control food costs and coordinate effectively with other kitchen sections and hotel departments. Flexibility to work shifts, weekends and holidays is also expected.
