Job Description

The Sous Chef (Garde Manger) supports the Executive Chef and leads the cold kitchen section, preparing salads, appetizers, canapés, terrines, dressings, and other chilled or specialty dishes. Candidates should have professional culinary training and several years of experience in a hotel, resort, or high-volume restaurant, preferably in garde manger operations. Strong knowledge of food safety, hygiene, portion control, presentation, and kitchen cost management is expected. The successful candidate should be organized, creative, hands-on, and able to supervise and train kitchen colleagues while maintaining Shangri-La’s quality standards. Flexibility for shifts, weekends, and holidays, along with good communication and teamwork, is essential.
