Job Description

The Chef de Cuisine leads the All Day Dining kitchen, overseeing food preparation, service standards, menus, quality, hygiene, cost control and team performance. Requirements typically include substantial experience in luxury hotels or high-volume restaurants, strong knowledge of international cuisine, HACCP and food-safety practices, and proven leadership of a diverse culinary team. The successful candidate is expected to maintain consistent quality during busy services, coach and motivate colleagues, manage staffing and inventory efficiently, work closely with front-of-house and senior culinary leaders, and uphold Shangri-La’s standards for hospitality, presentation and guest satisfaction.
