Job Description

The Chef de Cuisine is responsible for leading the Italian kitchen operation, maintaining culinary standards, planning menus, controlling food costs, and ensuring consistent quality and presentation. Candidates should have professional culinary training and substantial experience in Italian cuisine, ideally in a luxury hotel or upscale restaurant. Strong leadership, staff coaching, organization, hygiene awareness, and knowledge of HACCP and food safety are expected. The role requires someone who can manage service under pressure, coordinate effectively with restaurant and hotel teams, monitor inventory, and deliver an engaging guest experience while meeting Shangri-La’s quality standards.
