Job Description

The Sous Chef–Banquets supports the Executive Chef and leads banquet kitchen operations, including menu preparation, food production, plating and service for meetings, weddings and large events. Candidates typically need culinary training, several years of professional kitchen experience, and previous banquet or high-volume hotel experience. Strong knowledge of food safety, hygiene, portion control and kitchen cost management is expected. The role requires leadership, organisation and the ability to train and motivate cooks while maintaining Marriott quality standards. Flexibility is essential, as banquet schedules may include early mornings, late nights, weekends and public holidays. Candidates should also be able to coordinate effectively with banquet service teams and perform calmly under pressure.
