Job Description

The Sous Chef – Butcher supports the Executive Chef and oversees the butchery section, including meat preparation, portioning, storage and daily production. Candidates are expected to have professional culinary training and several years of experience in a hotel, resort or high-volume kitchen, preferably with strong knowledge of meat fabrication, poultry, seafood, food safety and hygiene standards. The role requires leadership, attention to detail, physical stamina and the ability to train and supervise colleagues. The successful candidate should maintain consistent quality, control waste and costs, follow Marriott and W Kuala Lumpur standards, coordinate effectively with other kitchen sections and remain calm during busy service periods. Flexibility to work shifts, weekends and public holidays is essential.
