The Sous Chef – Pastry supports the Pastry Chef in leading the pastry kitchen and producing high-quality breads, desserts, cakes, pastries and plated sweets. Requirements typically include professional culinary or pastry training, several years of pastry experience, strong knowledge of baking techniques, food safety and hygiene standards, and the ability to supervise a diverse kitchen team. The successful candidate is expected to maintain consistent quality, control costs and wastage, organize production, manage stock, follow Marriott and Westin standards, and contribute creative ideas to menus. Flexibility, reliability, leadership, attention to detail and the ability to work efficiently during busy service periods are essential. Resort or luxury-hotel experience is highly desirable.
