Job Description

The Chef de Cuisine leads the kitchen operation, menu planning, food preparation, quality control, cost management, and culinary team development. Candidates typically need formal culinary training, substantial experience in a hotel or high-volume restaurant, strong knowledge of international and local cuisine, food safety standards, HACCP procedures, and kitchen budgeting. Shangri-La expects a hands-on, creative, and commercially minded leader who can maintain consistent standards, coach colleagues, manage suppliers and inventory, and deliver excellent guest experiences. The role also requires strong communication, organization, resilience, and the ability to work shifts, weekends, and public holidays in a fast-paced luxury-hospitality environment.
