Job Description

The Sous Chef (Garde Manger) supports the Chef de Cuisine in managing the cold kitchen, including salads, dressings, appetizers, sandwiches, cold cuts and buffet presentations. Requirements typically include culinary training, several years of professional kitchen experience, and strong knowledge of food preparation, hygiene, HACCP and kitchen safety. Experience in a hotel or luxury resort is preferred. The successful candidate should demonstrate excellent knife skills, creativity, attention to detail and the ability to maintain consistent quality during busy service periods. Responsibilities also include supervising colleagues, organizing mise en place, controlling food costs, monitoring stock and ensuring the kitchen operates efficiently while meeting Shangri-La service standards.
