Job Description

The Chef de Cuisine leads the all-day dining kitchen, overseeing food preparation, menu execution, quality, presentation, hygiene and cost control across breakfast, lunch and dinner services. Candidates should have substantial experience in a quality hotel or high-volume restaurant, strong knowledge of international cuisine, food-safety standards and kitchen operations, and proven team-leadership skills. The role requires culinary creativity, organisation, commercial awareness and the ability to remain calm during busy service periods. The successful candidate is expected to coach and motivate the brigade, maintain Shangri-La standards, manage staffing and stock efficiently, collaborate with restaurant and stewarding teams, and consistently deliver excellent guest experiences.
