Head Baker

Job Description

The Head Baker leads the bakery and pastry production team, overseeing daily preparation of breads, pastries, desserts and other baked products to Shangri-La’s quality standards. Candidates should have professional culinary or bakery training, substantial experience in a hotel, resort or high-volume bakery, and strong knowledge of baking methods, food safety, hygiene and kitchen cost control. The role requires leadership, menu and production planning, inventory management, recipe consistency and the ability to train junior colleagues. Shangri-La expects a creative, hands-on professional who can maintain high standards under pressure, manage staffing efficiently and collaborate with other culinary departments. Flexibility for shifts, weekends and public holidays is normally required.
