Job Description

The Sous Chef (Banquet) supports the Executive Chef and oversees banquet kitchen operations, including menu preparation, food quality, presentation, production schedules, and service during conferences, weddings, and large events. Candidates typically need formal culinary training, several years of professional kitchen experience, and previous supervisory or banquet experience. Strong knowledge of food safety, sanitation, portion control, costing, and international cuisine is expected. The successful candidate should lead and motivate kitchen staff, remain calm under pressure, coordinate effectively with service teams, manage ingredients and equipment, and maintain Shangri-La’s standards for quality and guest satisfaction. Flexibility to work long, rotating shifts, weekends, and holidays is essential.
