Job Description

The Sous Chef (Banquet) supports the Executive Chef and leads banquet kitchen operations, including menu preparation, food production, plating, and service for conferences, weddings, and other large events. Candidates typically need a culinary qualification or equivalent professional experience, several years in hotel or high-volume kitchen operations, and strong knowledge of food safety, hygiene, costing, and kitchen standards. The role requires leadership, organization, creativity, and the ability to work efficiently under pressure. The successful candidate is expected to supervise and train culinary staff, maintain consistent quality and presentation, control waste and portion costs, coordinate with banquet and service teams, and ensure timely production while following Shangri-La policies.
