Job Description

The Sous Chef (Garde Manger) supports the Chef de Cuisine or Executive Sous Chef in managing cold kitchen operations, including salads, appetizers, canapés, sandwiches, dressings, pâtés and buffet presentations. Candidates should have professional culinary training and several years of experience in a hotel, resort or high-volume kitchen, with strong knowledge of food preparation, presentation, hygiene and food-cost control. The role requires leadership, creativity, organization and the ability to train and supervise kitchen colleagues. The successful candidate is expected to maintain Shangri-La standards, ensure consistent quality, follow food-safety procedures, control wastage and perform effectively during busy service periods.
