Job Description

The Chef de Cuisine leads the kitchen operation for an assigned restaurant or outlet, overseeing menus, food preparation, presentation, cost control, hygiene, and team performance. Candidates are generally expected to have several years of professional culinary experience, including supervisory or sous chef experience, preferably in an upscale hotel or resort. Strong knowledge of international cuisine, food safety, HACCP standards, purchasing, inventory, and kitchen budgeting is important. The successful candidate should be creative, organized, calm under pressure, and confident in coaching multicultural teams. Marriott experience and formal culinary training are advantageous.
