Job Description

The Chef de Partie – Indonesian Cuisine is responsible for preparing authentic Indonesian dishes to Shangri-La’s standards, managing an assigned kitchen section, and maintaining consistent quality, presentation, hygiene, and food safety. Candidates typically need professional culinary training and several years of experience in an Indonesian or hotel kitchen, with strong knowledge of local ingredients, spices, cooking methods, portion control, and HACCP procedures. The role requires teamwork, discipline, creativity, good time management, and the ability to work under pressure during busy service periods. Candidates are expected to follow recipes, control waste and costs, maintain clean work areas, support junior colleagues, and contribute to a positive guest dining experience.
