Job Description

The Chef de Partie – Indonesian Cuisine is responsible for preparing authentic Indonesian dishes to Shangri-La’s quality and presentation standards. Requirements typically include formal culinary training or equivalent professional experience, strong knowledge of Indonesian ingredients, spices, cooking methods and food safety, and previous experience in a hotel or high-volume restaurant kitchen. The candidate should be organised, reliable and able to work efficiently under pressure. Duties include preparing mise en place, cooking assigned menu items, maintaining hygiene standards, controlling food waste, supporting menu consistency and guiding commis chefs. Flexibility to work shifts, weekends and public holidays is expected, along with good teamwork, discipline and a genuine passion for Indonesian cuisine.
