Service Manager - Chef de Cuisine (Italian Cuisine)

Job Description

The Chef de Cuisine will lead the Italian kitchen operation, ensuring consistently high standards of food quality, presentation, hygiene and service. Requirements typically include professional culinary training, substantial experience in Italian cuisine, strong knowledge of kitchen operations, menu planning, food costing and HACCP standards, plus experience supervising and developing a culinary team. The successful candidate is expected to manage daily production, control costs and wastage, coordinate with restaurant and stewarding teams, maintain Shangri-La standards, and deliver an excellent guest experience. Creativity, leadership, organisation, communication skills and the ability to work calmly in a high-volume luxury hotel environment are essential.
