Job Description

The Hygiene Manager is responsible for maintaining hotel-wide food safety, sanitation and hygiene standards in line with Malaysian regulations and Shangri-La procedures. Requirements typically include a diploma or degree in food science, hospitality, public health or a related field, together with relevant hotel, restaurant or food-safety experience. HACCP, food-safety or equivalent certification is highly desirable. The successful candidate should be confident conducting inspections, audits and staff training; investigating incidents; maintaining accurate records; and working with culinary, stewarding, housekeeping and engineering teams. Strong communication, leadership, attention to detail and the ability to implement corrective actions are expected. Experience in a luxury hotel or international hospitality environment would be an advantage.
