Job Description

The Chef de Partie is responsible for managing an assigned kitchen section, preparing and cooking food to W Brisbane and Marriott standards, and maintaining consistent quality, presentation and portion control. Candidates should have commercial kitchen experience, sound knowledge of cooking techniques, food safety and hygiene requirements, and the ability to work efficiently under pressure. A relevant culinary qualification is desirable, while strong teamwork, communication, organisation and attention to detail are essential. The role involves supporting the wider kitchen team, following menus and recipes, monitoring stock, reducing waste, maintaining a clean workstation and complying with workplace health and safety procedures. Flexibility to work early mornings, evenings, weekends and public holidays is expected.
