Western Senior Sous Chef, Waterfall

Job Description

The Western Senior Sous Chef supports the Executive Chef in managing the Western kitchen at Shangri-La Singapore’s Waterfall restaurant. Responsibilities include supervising chefs, planning menus, maintaining food quality and presentation, controlling costs, ordering supplies, enforcing hygiene and food-safety standards, and coordinating service with front-of-house teams. Candidates are expected to have professional culinary training, substantial experience in Western cuisine, and previous supervisory experience in a high-volume hotel or fine-dining operation. Strong leadership, communication, organization, creativity, and knowledge of HACCP and Singapore food-safety requirements are important. The successful candidate should be hands-on, able to work shifts, weekends, and public holidays, and capable of training and motivating a diverse kitchen team.
