Chef de Cuisine (All Day Dining)

Job Description

The Chef de Cuisine oversees all-day dining kitchen operations, including menu planning, food preparation, presentation, quality control, hygiene, cost management and team leadership. Candidates should have substantial experience in a hotel or high-volume restaurant kitchen, strong knowledge of international cuisine, and proven supervisory or chef de cuisine experience. A culinary qualification, food-safety knowledge and familiarity with HACCP standards are expected. The successful candidate should be creative, organised, commercially aware and confident managing multicultural teams. They will be expected to maintain Shangri-La’s service standards, train colleagues, control food costs, coordinate with front-of-house departments and deliver consistently high-quality dishes during busy service periods.
