Job Description

The F&B & Cap Lazare Nature Reserve Manager will play a pivotal role in overseeing the operations of our restaurant, bar, banquet, and room service, while also managing the Cap Lazare Nature Reserve. This position requires a dynamic individual with a passion for hospitality and nature conservation, possessing the ability to lead a diverse team to deliver exceptional service and unique experiences to our guests. The ideal candidate will have a blend of Food and Beverage expertise and a commitment to sustainable practices within the nature reserve.

Responsibilities:

  • Oversee daily operations of the restaurant, bar, banquet, and room service, ensuring high standards of service and guest satisfaction.
  • Develop and implement strategic plans to optimize revenue and efficiency across all F&B outlets.
  • Collaborate with the culinary team to create innovative menus that reflect the restaurant's commitment to excellence and sustainability.
  • Manage the operations of Cap Lazare Nature Reserve, integrating eco-friendly initiatives and guest experiences.
  • Lead, motivate, and train a diverse team, fostering a positive and productive working environment.
  • Ensure compliance with health, safety, and sanitation regulations.
  • Monitor inventory and manage costs effectively to meet financial targets.
  • Engage with guests to gather feedback and continuously improve service offerings.
  • Coordinate with other departments to ensure smooth operations and exceptional guest experiences.
  • Ensure all events align with the brand image and premium positioning of the property.
  • Maintain the overall aesthetic integrity of the property, ensuring landscaping, décor, signage, and facilities meet high standards.
  •  Conduct routine inspections to ensure consistency in presentation.
  • Identify areas for improvement and implement corrective action promptly.
  • Ensure all guest-facing areas reflect a luxury eco-experience.
  • Prepare operational reports including revenue, costs, staffing, and performance metrics.
  • Develop budgets and monitor financial performance of F&B and events.
  • Oversee procurement, stock control, cost management, and waste reduction.
  • Ensure compliance with health, hygiene, and food safety regulations.
  • Lead, train, and supervise F&B staff to maintain high performance and service excellence.
  • Develop and implement standard operating procedures (SOPs) for service delivery.
  •  Recruit, train, and evaluate team members.
  •  Ensure compliance with company policies and procedures.
  •  Foster a culture of professionalism, teamwork, and environmental responsibility.
  • Ensure the overall cleanliness and upkeep of the reserve, including pathways, beaches, gardens, animal enclosures, and public areas.
  • Oversee maintenance schedules to preserve the natural ecosystem and biodiversity.
  • Ensure adherence to environmental policies and sustainability standards.
  • Supervise grounds and maintenance teams to maintain the aesthetic appeal of the property.
  • Monitor conservation efforts and promote eco-friendly practices among staff and guests.

Requirements:

  • 3 to 6 years of experience in Food and Beverage management, preferably within a luxury resort setting.
  • Fluency in English and French is required.
  • Proven experience in team management and leadership roles.
  • A strong commitment to environmental sustainability and experience in nature reserve management is a plus.
  • Excellent communication and interpersonal skills.
  • Ability to work effectively under pressure and handle multiple priorities.
  • Open to locally based or international candidates; work permit will be provided.
